Author’s In Bloom Blog Hop!



Welcome to this year’s Author’s In Bloom Blog Hop.  I am delighted to share a new recipe that has become a favorite in our house.  Also have a very sweet book to share that I am giving away one copy of  to one lucky person. 
First the recipe is the Apple Pie Blondie.  You might say that his recipe sounds familiar and you would be right.  This recipe appeared in the September issue of Southern Living Magazine.  I modified the recipe to make it gluten free and low sugar.  You can click on the link above for the original recipe.

Here is the recipe: 
6 large Granny Smith apples (about 3lbs.)
2 Tbsp. Rice Flour
1 ½ cup brown sugar (divided)
1 cup Canola Oil
1 ½  cup Rice Flour or other Gluten free flour
1 ½ tsp baking powder
½ tsp table salt
3 large eggs
3 Tbsp. vanilla
¾ cup chopped walnuts
½  (14.1-oz.) package refrigerated gluten free pie crust

1.     Peel 6 large apples, and cut into ¼  inch think wedges.  Toss with 2 Tbsp. of Rice Flour and ½ cup brown sugar in a skillet.  Pour ¼ cup Canola oil in the a large skillet over medium-high heat; stirring in apple mixture, and sauté  for 15 minutes.  Cook until apples are tender or  liquid has thickened.  Remove from heat and cool completely.


2.     Preheat oven to 350 degrees.  Melt ¾ cup butter. Stir together 1 ½  cups of Rice Flour or ( Any gluten free flour) and next 2 ingredients in a large bowl.  Add eggs, vanilla (substitution for bourbon), 3/4 Canola oil, and remaining 1 cup of brown sugar, stirring until blended.  Stir in walnuts (recipe suggest pecans it is your preference.
3.    Fit piecrust into a stone pie pan ( or use a skillet for the next part of the recipe).  Spoon two-thirds of apple mixture over bottom of pie crust, spreading and gently pressing apple slices into an even layer using the back of a spoon.  Spoon batter over apple mixture: top with remaining apple mixture.


4.    Very important place pie on lower oven rack and bake at 350 degrees from 30 minutes up till 1 hour  or until  a wooden pick inserted in center comes out with a few moist crumbs.  Remove from oven; cool pie completely on a wire rack.


5.     I skip this step because I found that the recipe did not need the sauce over the top.  You can check the link above for the sauce recipe.

Now that you have a delicious treat lets discuss Anything But Sweet by Candis Terry.  Thank you to Candis for the copy of the novel.
Synopsis:
Reno loves his town of Sweet Texas.  He feels strongly that nothing needs to change in his precious town.  Unfortunately the town of Sweet and his mother don’t agree with him.  They would like to see Sweet be more productive and have a better economy.  Enter My New Town a reality television led by its host Charli.  She announces the renovations to many of the businesses including Reno’s hardware store.  When they meet Reno is not impressed and wants nothing to do with her.  Will he change his mind?  Will the town be improved?  l?

My Thoughts:

I enjoyed the story of Anything But Sweet.  This contemporary  romance held my interest all the way through.  There was also humor sprinkled throughout the novel.  The two main characters of Reno and Charli are hard not to notice.  These characters are strong in both emotion and their backgrounds.  Loyalty plays a big role with both, but more so  with Reno.  The other characters help to move the story along. 
Over all an entertaining read one you will enjoy!  How would you like to  win a copy?
